Wagyu is the collective name for the four main Japanese breeds of cattle. All wagyu cattle originate from crossbreeding between native Japanese cattle and imported animals, mainly from Europe. Wagyu meat is easily identified by its auburn color and marbling, visible in the infiltrated fat, which gives it aroma, flavor, and unique juiciness.

When you feel the meat from the different cuts melting in your mouth, you will understand why there is a "before and after" Wagyu.
